Ted Lasso Biscuit Recipe for Sharing!

Ted Lasso, a TV show starring Jason Sudeikis on Apple TV, has taken the world by storm and won over many hearts - including mine!! If you haven't had a chance to watch, try and stream it on Apple TV.

I found a few recipes for Ted's famous biscuits online, the only thing wrong with all those recipes out there is that it called for a 9X9 pan and little salt.
TOO small! And always add more salt!

These biscuits were meant for sharing. Sweet and salty goodness.

I created my own double recipe. Bake a batch and drop a few off to neighbours and friends. I couldn't find a pink box, but maybe you can! It is the thought that counts right? I also throughly enjoyed my biscuits with a Blume Pumpkin Drink, I mini frothed mine with some instant coffee, seriously my new go-to drink! You can grab the Blume Pumpkin drink mix at our local refinery Drift + Sondor.

Ingredients:
Parchment paper
2 cups unsalted butter, skim a little off the top for greasing the pan
4 cups of white flour
1 cup of white sugar
4 tsp of pure vanilla extract
1 tablespoon of fine sea salt

Method:
Step 1.
Set oven to 350F.
Use a some of that butter you skimmed off to grease a 12X9 cake pan. Then line bottom and sides with Parchment paper. Purpose of the paper is it will help you take the biscuits out easier. Only leave about a 1 inch over hang of paper over the sides. Trim if you have too. Set aside.
Step 2.
Dump everything in the standup mixer (or your alternative to that). Mix with the paddle attachment for about 1.5 minutes. After that I pulled it and used my hands to work the rest into a dough, approx another 2 minutes.
Step 3.
Dump the dough in the cake pan and use your hands to spread it out and pack down even.
Put in oven or approx 30-35 min, or until edges are growing.
Step 4.
Let completely cool, then remove the slab carefully from the pan. With a large knife, slice into nice little bars.
Step 5.
Wrap some up and gift away! This little treat went to a wonderful teacher at the local Elementary school. Who would you drop some off to?
